There is an excellent spot NW of The Crater Bar. With a bit of care you can drive an ATV to the top of the mountain where a nice jump is. You can pull off a 1080 if you jump at the correct speed and angle.

theres a massive cliff behind the Ktam radio station which is pretty good for that, if you follow the edge round to the left about 100m theres a nice little jumping off point. I've done the 720 off of there, i would have done the full 1080 if i hadnt of hit the Gas station sign.
I spin off the roof of Top-Notch Toolworks on a Hannibal. There are some places where it doesn't like it because you land in water, but just aim for the other island that makes up part of the ramp.

San Francisco is awesome for big jumps.
i saw the pursuit... remembered san fran... got it done in 3mins.
You can climb up the top of the tower in sf downtown and easily 1080 off the top. Look around the base pillars for a button prompt, then keep searching as you climb up.
If you are playing on a console it helps to hold the joysticks in opposite directions as it seems to make the vehicle spin faster.
There is a rock spike near San Fran way point to the west. It overlooks a small area where the ground drops down and there are houses. You really can't miss it if you head straight west. its less than 150m away.
Use the rock spike like a ramp and fall into the crater where the houses are. Avoid hitting the houses. I got my 1080 here.
