I'm not going to post specifics, but here is what I'm running.
i7 Processor
16GB Ram
GTX 560 ti Video Card (I am upgrading that to a GTX 680 next month)

2 monitors (one 23" and one 19")
You mean it's expensive to you......Is it overkill? Probably depending on what else they use their computer for. In the end it's really no different then they guy down the street who tunes imports, some people just want to see what kind of monster they can build :p
Really good advice though for people who are looking for the most bang for their buck on a gaming only rig. Core i5 3570k's are more then enough for gaming while giving you a good option if your into OC'ing and the Athlon II X3 is pure goodness for the price.

We are talking about DLP or LCD hdmi and dvi flatscreens that are better and more efficient.
Also depends on your video cards and DPI rates it can handle i am running 1080p and configuration is below.

1250w is for 3 way or more SLI. My dual 680's only run around 700watts total power, peak at full load. So I have 300watts leeway for things like overclocking them. More leeway is nice to an extent but 500 watts of it would be inefficiency to me. 300 watts is just enough to be efficient without wasting too much. It's personal preference though.
