If Gamestop refuses to help you(I would do as suggested above and lodge a formal complaint with the company) and you have the receipt(as you say you do), contact Trion. They should be able to help you, as the code for the regular edition would not match the code for the ultimate edition which you paid for. Just my humble opinion.
Honestly, the problem is that developers keep giving them the best preorder bonuses. They've screwed me over on multiple occasions, but I keep wanting what they have to offer. Recently I know they ran out of stock for MGS Revengeance because they took too many preorders, but they claimed that my CC was declined, even tho my order had a couple different preorders like Ni No Kuni which was charged just fine, but they were like, nope, didn't work, and pretty much told me I was SOL. Honestly, I cancelled my preorder for Heart of the Swarm with them, got if off Amazon, and cancelled Defiance and got it on Steam. I'm done with them, and while down the line I might get tempted, it's just not worth it. And again, I just wish they didn't get the best preorder bonuses from developers, I would gladly throw my money at Amazon if they always had the best one, or Steam, or something. Thank god Steam reached Tier 3 rewards, but yea, people keep making the same mistake, but hopefully people will learn. I know I will never again spend money there.

This complaint is very odd. Everything Gamestop does goes through Corporate, even preorgers. I have never had a problem when I've ordered games at the store itself. Online at gamestop is a totally different animal, so much so, I don't even use the site.
So the only thing I can think of here is that OP, might have wanted the Uberelitebbqsauce edition, but never checked the receipt when he left to make sure what it was? The store owner / manager doesn't have anything to gain by keeping the thing for himself, unless he sells it privately, but everything they do is inventoried so it would show up as a loss.
If OP does indeed have a receipt for the uberelitebbqsauce edition, call the store, and ask for the district managers number, speak with him. OR call your bank, charge the transaction back to get your money, then just wait 2 weeks. You'll walk into the store and see your uberelitebbqsauce edition on the floor.
Something here just doesn't add up.
I go to gamestop to get Steam gift cards that's it. I only do that because I buy the gamestop gift card at a local grocery store that gives me double credit on gift cards towards free gas.

Wouldn't surprise me one bit coming from a Gamestop. I've been in some where the workers were rude, smart mouth etc. Once I bought a game and was gonna get the guide for it but they didn't have it in yet. So as always I was told, come back when we have them and you'll still get your 20% off.
Well a day or so later I came in to buy it and when I told the guy about the 20% off "You only get that if you buy the guide on the same day as you buy the game!" He fought with me, getting rude, etc for a few mines. I kept telling him that it was the rule of the store, if no guide in the store the day you buy it you can still get 20% off later when they get them... "Nope, that's not true!!!" After a bit he then says "I'll let you do it this time, but never again!!!"
I recall when EverQuest 2 first launched, I had pre-order the collectors edition. That day I called to see if it had came in yet. They asked which one I pre-ordered and I told them and got "Uhh, yeah, Sony did a recall on the collectors editions, they didn't put all the discs in the boxes so they have to fix them."
Later I asked friends that pre-ordered the CE and was told "Uhhh, no that didn't happen. Infact I have mine right now." I looked around all over the net and didn't see one place stating Sony had done a recall on the CE.
So either a worker took mine, or the store sold mine to someone that just walked in, etc.
Or how about the thing with Deus Ex : Human Revolution. PC version had a code for a free OnLive stream/digital version. When Gamestop found out they threw a fit, they told all their stores "Open up that game, take that code out, throw it away and reseal and sell it as new!"
Things Gamestop does never surprises me that much anymore.
