Congrats on getting the ultimate edition. I know I am getting the regular edition, but I am still debating on if I am going to get one of the other editions.

I ordered the Ultimate Edition from GameStop as well. I usually don't buy these editions because I am a miser.
I love all the art and books and fun stuff but I love my money too. I will spend it when I think I am getting great value for the money and I believe that we do for the Ultimate Edition.
The Collector's Edition costs $40 over the regular price of the game. Looking at what you get with either the Digital or Physical version: the titles, outfits, weapons, XP boosts and script is all fluff and nice, but any good player can gain XP and script; titles are just gravy. The thing that will be worth the extra money are the +5 Inventory slots because as any good gamer knows, more inventory slots means more loot without having to go back to a vendor and that translates to more script and less annoyance on a daily basis. I don't know if the +5 slots are worth $40 because they haven't released any of the DLC prices yet.
Now with the Ultimate Edition you also get the 1 year DLC pass and 1200 bits which Lance has stated in a post, they intend for that to be worth about $80 and if its not, they will adjust the reward accordingly. So the way I see it, the Ultimate Edition is like buying the game and putting $80 on credit for future purchases in game. That makes the +5 inventory slots only cost $10 and then look at all the other fluff you get to be nerdy with!
Another advantage is with the exclusive sell through GameStop, you don't have to have the money today, you just have to order it because GameStop won't charge you until the game ships which means you can save for the next 2 months to make sure you have $150+tax and shipping (which for me with overnight shipping came to $171) in the bank or on your credit card. And GameStop lets you cancel your order anytime before it ships so you can change your mind in a month if you don't think you can afford it.
The thing that brought me to purchase the Ultimate Edition is my previous experience with an MMO. I played Lord of the Rings online for about 5 years. I still log in occasionally but I don't spend as much time on it. I currently subscribe for $99 per year and still have an active sub. At one point they offered a lifetime sub for $300 which I didn't think I had the money for so I didn't bother with it. I calculated that over the 5 years I actively played, I spent just over $600 in total in monthly, then quarterly, then yearly subs. That was twice as much as the lifetime sub would have been. So now when I know I am going to love a game (and I know I will love this one) I know it's worth it to spend the money up front to save in the long run. I am really counting on the DLC season pass to more than pay for itself.

Meh, good on you if you have the money and want to spend it on something like this. I never have, and never will spend that much money on a game. I came close once buying three different versions of the game to collect in-game items. All of those items ended up getting put on the in-game store at a significant discount.
I learned my lesson from that and watching other games where people spent a fortune only to see the game go belly up and they had nothing to show for it.
I have a $20 Amazon credit I'm using for my purchase (most likely), but can't bring myself to pay any more than standard. Even $60 for a PC game bothers me still to this day. So for $40 I'm much happier with it having not even touched the game yet.

i just got the gamestop edition as well for ps3 only put 25$ down on it but i cant wait
