What I meant was that everybody has the same potential to unlock everything and anything regardless what they start out as i.e. there are no classes, it comes down to your personal progress with certain weapons and abilities.

Do you get more proficient with different types of weapons with use or anything?

Yes.

There are twenty-something levels to item types. Each weapon category and vehicle category can be leveled for modest statistical bonuses. Additionally, individual weapons can be themselves leveled though once you hit max you just earn a particular stat bonus so it's not incremental like the gear category levels.

That's what they mentioned in the stream. So should take a while to max everything.

From what I saw in the streams it takes A LONG time to level weapons skills

To answer the questions:

No, we have had no such confirmation or even hints that the weapon you start with will be better than just finding it or buying it.

Yes, you also level up each weapon type (LMG, Assault Rifles, Pistols etc) with shooting etc as well as leveling up vehicle types by riding around, jumping and running over enemies.
