They probably were showing off a lot more outfits, but as the game is live now they will release them a little at a time. To keep people wanting to keep purchasing things over time.
They were pretty much changed to Pursuit rewards I believe.. could be wrong though. There are also some in the Bits Store as well.

Yeah they were in the bits store, but during beta there were A TON more than are available now. Just wondering where they went?

You are indeed wrong, not a single item I saw in bit store during beta is availible trough pursuits, gueesing they were already set in stone by then.
Thats not to say there arnt re-skins in the pursuits.
I had already planned out two outfits from the beta store to use for my character, none of them available currently from the store, purstuits or missions..

As others have said, they were removed to be sold as "new items" down the line. Most games do this to keep the illusion of new content that they've been working hard on, even though the work has been done months in advance. A good example of this is the DLC packs for saints row the third. Everything apart from the mission packs were in the disc on day one, cracked versions had them yet they advertised them as new content when they were released.
EMC Trooper is one of the pursuits (Scrapworks Coop) and I believe the Ark Predator is another suit that was in the bits store. I imagine that they're apart of the big DLC/Content push we're receiving soon.
