Duel
I can't believe we don't have a duel functionality already, which pretty much every single MMO has (whether PvE or not). Should be relatively simple to implement, just select a nearby player, send off a duel-invite, and if they accept then a circle appears on the map that defines the boundaries of your duel.
Fight until one of you die or until the 5-10 minutes passes.
Manhunt
This is kinda an evolution of a duel, and I've kinda envisioned it as a PVP-mode that takes place across the entire map. One player is selected as the bait on random, while a team of 4-5 opposing players are selected as the hunters. At the start of the game, they are teleported at random to various locations across the map, and fast travel is disabled (vehicles are still functional). In addition to this, the hunters are given a sort of tracking device (e.g, EGO will tell the hunters what direction the bait is at, and roughly how far away the bait is).
There's a time limit of maybe 10 minutes or so, and the bait has to escape the opposing players. If he survives, he wins the game and gets a sizable prize in terms of key codes/scrip/exp. If the hunters manage find the bait, and kill him, then they win the game and get a prize - but the prize shrinks each time one of the hunters die (so they too gotta stay on their toes).
